INGREDIENTS:

  1. Parotta - 3 big
  2. Egg - 3
  3. Onion - 1
  4. Tomato - 1
  5. Green chili - 1
  6. Chopped coriander leaf - 1 teaspoon (tsp.)
  7. Chopped mint leaf - 1 teaspoon (tsp.)
  8. Curry leaf - 10
  9. Chili powder - 1 teaspoon (tsp.)
  10. Curry powder or Garam masala powder - 1/2 teaspoon (tsp.)
  11. Mutton or chicken curry or Vegetable curry - 1 cup
  12. Salt - to taste
  13. -- for tempering--
    1. Ghee or Oil - 2 tablespoon (tbsp.)
    2. Cinnamon stick - 2 inch

PREPARATION:

  1. Break parotta into small pieces.
  2. Chop onion, tomato and green chili into fine pieces.
  3. Heat ghee or oil in a pan, add cinnamon stick cook till it turns brown.
  4. Now add onion, green chili, curry leaves and cook until onion turns golden brown.
  5. Now add tomato and cook until oil separates.
  6. Now add chili powder, curry powder or garam masala powder, salt to taste, cover and cook for 2 minutes.
  7. Now add the mutton or chicken or vegetable curry cover and cook for 2 minutes.
  8. In separate pan heat oil, break the egg, salt to taste and make scramble egg.
  9. Cover, simmer and cook until the parotta becomes soft. Now add scrambled egg mix well cook for couple of minutes.
  10. Now garnish with coriander ,mint leaves and serve the kothu parotta.
