INGREDIENTS:

  1. Drumstick leaf - 1 cup
  2. Egg - 3
  3. Finley chopped onion - 1
  4. Oil - as needed
  5. Salt - as needed
  6. ------------------------
  7. -- Grind to paste ---
  8. ------------------------
  9. Shredded coconut - 1 teaspoon (tsp.)
  10. Green chili - 1
  11. Curry leaf - 1 sprig
  12. Cumin seed - 1 teaspoon (tsp.)

PREPARATION:

  1. Grind shredded coconut, green chili, curry leaf, cumin seeds to coarse without adding any water.
  2. In a pan heat oil. Now add onion and sauté until it becomes translucent. Now add drumstick leaves and sauté for 3 minutes.
  3. In a bowl break the egg. Now add ground coconut mixture, sautéed drumstick leaves, salt and beat well.
  4. Heat a skillet coat with oil. Once the oil is heated pour the egg mixture and spread well. Once the lower side is cooked flip and cook the other side and serve.

NOTES:

  1. Goes well with rice.
