INGREDIENTS:

  1. -- For Dosai --
    1. Dosai batter - as needed
    2. Sesame oil - as required.
  2. -- For Masala --
    1. Shredded Paneer (Cottage cheese) - 100 grams
    2. Finely chopped green bean - 20 count
    3. Finely chopped carrot - 2
    4. Finely chopped onion - 1 medium size
    5. Finely chopped tomato - 1/2 medium size
    6. Chili powder - 1 tablespoon (tbsp.)
    7. Garam masala powder - 1/2 teaspoon (tsp.)
    8. Turmeric powder - a pinch
    9. Coriander leaves - handful
    10. Oil - 2 tablespoon (tbsp.)
    11. Salt - as needed.

PREPARATION:

  1. -- Masala preparation: --
  2. In a pan heat oil. add onion and sauté until the turn translucent.
  3. Now add tomato and sauté until they become mushy.
  4. Now add chopped green beans, carrot and sauté until they are cooked. (takes about 3 to 4 minutes)
  5. Now add chili powder, garam masala powder, turmeric powder and sauté until the raw smell is gone.
  6. Now add paneer, salt and sauté until the paneer is cooked. (takes about 3 to 4 minutes).
  7. Garnish with coriander leaves and remove from heat.
  8. -- Masala Dosai preparation: --
  9. Heat dosai iron skillet coated with oil.
  10. Pour 2 ladles of  dosai batter and spread it thin so dosai will be nice and crispy. Sprinkle oil around the dosai and place a lid and cook for 1 minute or until the dosai turn golden brown.
  11. Now place some paneer masala in the middle of the dosai and spread it around.
  12. Now fold the dosai and serve.
  13. Make more dosai like this and serve.

NOTES:

  1. Serve dosai alone or with chutney or sambar.
