INGREDIENTS:

  1. Rice - 3/4 kilogram
  2. Shrimp - 1/2 kilogram
  3. Thinly sliced Onion - 4
  4. Chopped Tomato - 3
  5. Slit Green chili - 3
  6. Coriander powder - 1 teaspoon (tsp.)
  7. Ginger paste - 1 1/2 teaspoon (tsp.)
  8. Garlic paste - 1 1/2 teaspoon (tsp.)
  9. Chili powder - 1 teaspoon (tsp.)
  10. Black pepper powder - 1 teaspoon (tsp.)
  11. Cumin seed powder - 1 teaspoon (tsp.)
  12. Turmeric powder - 1/2 teaspoon (tsp.)
  13. Fennel seed powder - 1/4 teaspoon (tsp.)
  14. Biryani masala powder - 1 1/2 teaspoon (tsp.)
  15. Tomato sauce - 1 teaspoon (tsp.)
  16. Cinnamon stick - 2 one inch
  17. Clove - 6
  18. Cardamom - 4
  19. Chopped Mint leaf - 1/4 cup or from 5 stalk (stem)
  20. Chopped Coriander leaf - 1/4 cup or from 5 stalk (stem)
  21. Curd or Yogurt - 1/2 cup
  22. Cashew - 10
  23. Yellow color (optional) - a pinch
  24. Rose water - 1 teaspoon (tsp.)
  25. Oil - 50 milliliter
  26. Salt - as needed

PREPARATION:

  1. Soak the rice for 15 minutes in water and cook it by adding 1 cinnamon stick, 4 clove, 2 cardamom, salt.
  2. In a pan head oil, add the rest of cinnamon stick, clove, cardamom and sauté for a minute.
  3. Now add 3/4 of onion, green chili and sauté until onion turns translucent (golden brown).
  4. Now add ginger paste, garlic paste and sauté until the raw smell is gone.
  5. Now add biryani masala powder, chili powder and sauté them.
  6. Now add the tomato and sauté until oil separates.
  7. Now add the prawns and mix well until they are well coated.
  8. Now add black pepper powder, cumin seed powder, fennel seed powder, turmeric powder, tomato sauce, rose water, salt, a cup of water. Cover with a lid and boil for 5 minutes.
  9. Now add the cooked rice and spread well.
  10. In the mean time roast rest of the onion, cashew in ghee and add to the biryani. Dissolve the color in 2 teaspoon (tsp.) of water, coriander leaves and add to the biryani and mix well.
  11. Now cover the biryani with lid and place a heavy object on top. Simmer and cook for 5 minutes.
  12. Now remove the lid and mix well. Place the lid again. Simmer and cook for another 15 min and serve.
