INGREDIENTS:

  1. GingerĀ  (Tender) - 100 grams
  2. Tamarind - lemon size
  3. Dry chili - 25 to 30
  4. Crystal sea salt - 1/4 cup or as needed
  5. Jaggery powder - 100 grams
  6. Mustard seed - 1 teaspoon (tsp.)
  7. Asafoetida powder - 1 teaspoon (tsp.)
  8. Sesame oil - 50 milliliter

PREPARATION:

  1. Grind ginger, salt, tamarind, dry chili, little water as needed to a fine thick paste.
  2. Now add jaggery and mix well.
  3. In pan heat oil, add mustard seed, asafoetida powder. Once the mustard seed stopped splattering add the ground ginger paste and cook until oil separates. Ginger thokku is ready.

NOTES:

  1. Goes well with rice, idli, dosai and curd rice.
