Barley vegetable soup recipe

INGREDIENTS:

  1. Barley - 1/2 cup
  2. Mixed Cut vegetables (Cauliflower , cabbage, green beans, hyacinth bean, peas) - 1 cup
  3. Black pepper powder - 1/4 teaspoon (tsp.)
  4. Finely chopped onion - 1/4
  5. Corn flour - 1 teaspoon (tsp.)
  6. Olive oil - 1 tablespoon (tbsp.)
  7. Salt - to taste

PREPARATION:

  1. Soak barley for 3 to 4 hours. In a pressure cooker add barley, vegetable and 3 to 4 cups of water and cook for 2 whistle. Keep it aside until pressure is released.
  2. In a pan heat oil add the cut onions and cook until it turns golden brown. Now add the cooked barley with water, salt to tastes, black pepper powder bring to boil.
  3. Add corn flour if you want the soup to be thick and serve.
