Jackfruit seed sambar recipe

INGREDIENTS:

  1. Jackfruit seed - 1/2 kilogram
  2. Chopped Drumstick (about an inch or 2 inch) - 2
  3. Pigeon pea - 1 cup
  4. Chopped Onion - 2
  5. Chopped Tomato - 2
  6. Chopped Garlic - 5 clove
  7. Slit Green chili - 2
  8. Curry leaf - 1 sprig
  9. Coriander leaf - 1 sprig
  10. Tamarind - 1 gooseberry size
  11. Chili powder - 1 1/2 teaspoon (tsp.)
  12. Turmeric powder - 1/2 teaspoon (tsp.)
  13. Mustard seed - 1/2 teaspoon (tsp.)
  14. Fennel seed - 1/2 teaspoon (tsp.)
  15. Oil - as needed
  16. Salt -as needed

PREPARATION:

  1. Cook the jackfruit seeds by adding salt, water as needed.
  2. Pressure cook the pigeon pea, turmeric powder by adding water as needed to a mash. i.e. mushy and completely cooked.
  3. Soak the tamarind in water and get a thick juice.
  4. In a pan heat oil. Now add mustard seed once the mustard seed stop splattering add onion, curry leaves, green chili, garlic and sauté until the onion turns translucent.
  5. Now add tomato, drumstick, salt and sauté until the tomato becomes mushy and sautéed well.
  6. Now add tamarind juice, chili powder, water as needed and cook until the drumstick is cooked.
  7. Now add the cooked dal, cooked jackfruit seeds and cook for few minutes. Before you remove from stove (heat) garnish with coriander leaves and serve.
