Vegetable pulao (pilaf) recipe

INGREDIENTS:

  1. Basmati rice - 1 cup
  2. Cauliflower - 300 grams
  3. Green beans - 150 grams
  4. Carrots - 150 grams
  5. Potatoes - 2 medium size
  6. Cloves - 3
  7. Cinnamon sticks - 1/4 inch
  8. Cardamom - 2
  9. Onion - 2 small
  10. Hot green chilies - 4
  11. Ginger root - 1 inch
  12. Garlic - 3 cloves
  13. Oil - 1/4 cup
  14. Mint leaves - 1/2 cup
  15. Salt - to taste

PREPARATION:

  1. Cut the cauliflower, green beans, carrots and potatoes into big pieces
  2. Cut the onion and hot green chilies into small pieces.
  3. Make a paste with ginger and garlic.
  4. Heat oil in a pan.
  5. Add cloves, cinnamon sticks, cardamom and onions and cook until onion turns golden brown.
  6. Add ginger and garlic paste and cook for 2-3 minute.
  7. Add the cut hot chilies and cook for 1- 2 minute.
  8. Add mint leaves and cook for 1-2 minute.
  9. Add add the cut vegetables, rice and 2-2.5 cups of water and bring to boil.
  10. Now reduce the heat simmer and cook until the rice is done.
