Tomato rice recipe

INGREDIENTS:

  1. Cooked rice – 3 to 4 cups.
  2. Ground to paste or cut ripe tomatoes – 1/4 kilo gram
  3. Finely chopped Onion – 200 grams
  4. Finely chopped green chili – 3
  5. Chili powder – 2 teaspoon (tsp)
  6. Coriander powder – teaspoon (tsp)
  7. Turmeric powder – 1/2 teaspoon (tsp)
  8. Ginger garlic paste – 2 teaspoon (tsp)
  9. Cloves – 3
  10. Cinnamon stick – 1 inch broken into fine pieces
  11. Cardamom – 2 crushed
  12. Oil – 2 table spoon
  13. Cilantro or coriander leaves – 1/4 cup
  14. Curry leaves (optional) - 5
  15. Salt - to taste

PREPARATION:

  1. Add salt to rice to mix well.
  2. Heat oil in pan add cloves , cinnamon stick, cardamom for a minute, now add the onions and cook until it turn light golden brown.
  3. Add the ginger garlic paste and cook until raw smell is gone and oil separates.
  4. Add chili powder, coriander powder, turmeric powder and cook for 2 to min.
  5. Add the tomato puree or cut tomatoes and cook until oil is separated.
  6. Garnish with Cilantro or coriander leaves.
  7. Remove from fire and let it cool. once cooled down mix with rice and serve.

NOTES:

  1. Trick is to make make the sauce to right consistency so its dry when you mix with rice.
