INGREDIENTS:

  1. Rock candy (Kalkandu) - 1 cup
  2. Rice - 1/2 cup
  3. Almond - 3
  4. Cashew - 7
  5. Raisin - 5
  6. Saffron - a pinch
  7. Cardamom powder - 1/4 teaspoon (tsp.)
  8. Ghee - 5 tablespoon (tbsp.)
  9. Fresh coconut - 1/2
  10. Salt - as needed.

PREPARATION:

  1. Rinse the rice and let it dry by spreading on a clean cloth.
  2. Soak almond in hot water peel the skin and chop into small pieces.
  3. Break the cashew into small pieces.
  4. Melt little ghee and roast the cashew, almond, raisins until the raisins plump up and cashew turns brown and keep it aside. In the same pan roasted the rice until rice turns translucent. Cook them by adding 1 1/4 cup of water until rice becomesĀ  mushy.
  5. Roast the coconut to golden brown in ghee to golden brown and keep it aside.
  6. Boil 1/2 cup of water and add rock candy. Cook until the rock candy dissolve.
  7. Now add the cooked mushy rice to the melted rock candy.
  8. Stir and cook until the rice starts to boil. now add the saffron, salt, cardamom powder, roasted coconut, roasted nuts, raisins, rest of the ghee. Mix well and cook for couple of minutes and serve.
