Quick and easy vegetable biryani recipe

INGREDIENTS:

  1. Rice - 1 1/2 cup
  2. Vegetable (potato, green beans, carrot, radish, cauliflower, green peas) - 1 1/2 cup
  3. Cinnamon stick - 1 inch
  4. Clove - 5
  5. Cardamom - 1
  6. Bay leaf - 1
  7. Marathi Moggu - 1
  8. Fennel seed - 1/4 teaspoon (tsp.)
  9. Chopped Green chili - 5
  10. Dry chili - 1
  11. Yogurt - 1 cup
  12. Chili powder - 1 tablespoon (tbsp.)
  13. Black pepper - 3
  14. Lemon - 1/2
  15. Cumin seed - 1 teaspoon (tsp.)
  16. Chopped Tomato - 1
  17. Salt - as needed
  18. Ghee - 2 tablespoon (tbsp.)
  19. Oil - 2 tablespoon (tbsp.)
  20. Coriander leaf - for garnishing

PREPARATION:

  1. Heat oil, ghee in a pan. add cinnamon stick, cloves, cardamoms, bay leaf, fennel seeds, black pepper, cumin seeds. Once the seeds stop splattering add green chili, dry chili can sauté until green chili is sautéed.
  2. Now add vegetables and sauté for 2 to 3 minutes.
  3. Now add the tomato, rice and sauté for a minute. Now add yogurt, 1/2 of chili powder, salt, 4 tumbler of water (make sure the ratio of rice to liquid is 1 cup of rice : 2 cup of liquid) and cook the rice . NOTE: you can transfer this to rice cooker and let it cook.
  4. Once the rice is cooked add the rest of chili powder, coriander leaves, squeeze the lemon juice. Mix well and serve.

NOTES:

  1. You can also prepare the biryani in a pressure cooker as well.
