Pulao (pilaf) recipe

INGREDIENTS:

  1. Basmati rice - 1 cup
  2. Cauliflower - 1
  3. Onion - 1
  4. Hot green chili - 3
  5. Garlic - 4 cloves
  6. Ghee - 3 tablespoon (tbsp)
  7. Cinnamon stick - 1 inch
  8. Cloves - 2
  9. Cardamom - 2
  10. Bay leaf - 1
  11. Mint leaves - 1/4 cup
  12. Coriander leaves - 1/4 cup
  13. Salt - to taste

PREPARATION:

  1. Cut onion into fine pieces. Cut cauliflower into 1 inch cubes. Slit the hot green chili vertically.
  2. In a pan or pressure cooker add ghee when its melted add cinnamon stick, cloves, cardamom, bay leaf  and cook for 1-2 min.
  3. Now add onion, green chili, ginger, mint leaves and cauliflower and cook for 2 min.
  4. Now add 2-3 cups of water. Add salt to taste and bring to boil. Now add the coriander leaves.
  5. Now add the rice pressure cook until the rice is done or if used a pan reduce heat simmer and cook until the rice is done.
