Pineapple rice recipe

INGREDIENTS:

  1. Basmati rice - 200 grams
  2. Pine apple puree - 1 cup
  3. Green peas - a handful
  4. Shredded carrots - a handful
  5. Chili powder (optional) - as needed
  6. -- For Tempering --
    1. Mustard seed - 1/2 teaspoon (tsp.)
    2. Split black gram - 1/4 teaspoon (tsp.)
    3. Split bengal gram - 1/4 teaspoon (tsp.)
    4. Finely chopped ginger - 1 teaspoon (tsp.)
    5. Finely chopped green chili - 2
    6. Turmeric powder - 1/2 teaspoon (tsp.)
    7. Coriander leaves - 1/2 teaspoon (tsp.)
    8. Curry leaf - 5
    9. Oil - 4 tablespoon (tbsp.)
  7. Salt - as needed.

PREPARATION:

  1. Cook basmati rice.
  2. In a pan heat oil, add mustard seeds, split bengal gram, split black gram once the mustard seeds stop splattering add green peas, carrot, salt as needed, green chili, chili powder and sauté for until vegetables are cooked.
  3. Now add the pine apple puree sauté for 2 to 3 minutes. Now add cooked basmati rice little by little and mix well.
  4. Once mixed well, garnish with coriander leaves and serve pineapple rice hot.

NOTES:

  1. If cooking for children you can reduce the spice by adding slit green chili so its easy to be removed and no chili powder.
