Paneer rice recipe

INGREDIENTS:

  1. Cooked rice - 2 cup
  2. Shredded paneer - 1 cup
  3. Sliced onion - 1
  4. Slit green chili - 3
  5. Curry leaf - 5 count
  6. Coriander leaf - handful
  7. Turmeric powder - 1/4 teaspoon (tsp.)
  8. Salt - as needed
  9. -- For Tempering --
    1. Mustard seed - 1/4 teaspoon (tsp.)
    2. Split Bengal gram - 1/4 teaspoon (tsp.)
    3. Split black gram - 1/4 teaspoon (tsp.)
    4. Cumin seed - 1/4 teaspoon (tsp.)
    5. Asafoetida powder - a pinch.
    6. Oil - 1 tablespoon (tbsp.)

PREPARATION:

  1. In a pan heat oil. Add mustard seeds, Bengal gram, black gram, cumin seeds, asafoetida powder. Once the mustard seeds stop splattering add onion, green chili, curry leaves and sauté.
  2. Once the onion sauté little, add turmeric powder, salt and sauté for 2 to 3 minutes until the onion is well sautéed.
  3. Now add paneer and sauté for one or two minutes or until paneer is cooked.
  4. Now add cooked rice, coriander leaves and mix well then serve.

NOTES:

  1. Goes well with chips, Poriyal.
