Panakarkandu (palm sugar) rice recipe

INGREDIENTS:

  1. Panakarkandu (Palm sugar) - 1 cup
  2. Milk - 1 litre
  3. Rice - 1 cup
  4. Ghee - 1/2 cup
  5. Cashews - 10
  6. Raisins - 10
  7. Cardamom powder - 1/2 tablespoon (tbsp)
  8. Shredded coconut - 1/2 cup

PREPARATION:

  1. Cook the rice to a paste. ( add 3 cup of water and cook).
  2. In a pan melt ghee add cashews, raisins, shredded coconut until the raisins plump up and coconut turn light brown.
  3. Now add the rice and mix well for 1 min.
  4. Now add milk, Panakarkandu (Palm sugar) and cardamom powder.
  5. Reduce the heat simmer, stir and cook until the rice becomes a thick paste or consistency you like and serve.
