INGREDIENTS:

  1. Rice - 1 cup
  2. Chopped carrot - 1
  3. Chopped green bean - 4
  4. Chopped cauliflower - 1/ 4
  5. Green chili - 4
  6. Sliced Onion - 3
  7. Mint leaf - 3/4 cup
  8. Coriander leaf - 1/4 cup
  9. Cinnamon stick - 2 inch (broken into pieces)
  10. Cloves - 6
  11. Cardamom - 3
  12. Coconut - 1/2
  13. Garlic - 10 cloves
  14. Oil - 1/4 cup
  15. Salt - to taste

PREPARATION:

  1. Soak rice for 10 minutes. Drain water and keep it aside.
  2. Grind coriander leaves, mint leaves, green chili, garlic into a fine paste by adding little water as possible.
  3. -- Making coconut milk --
    1. Shredded the coconut.
    2. Add 1 cup of water and grind it in a blender and strain the coconut milk.
    3. Now add anther cup of water to the grind coconut; grind again and milk.
  4. Heat oil in the pressure cooker; now add cinnamon stick, cloves, cardamom and sauté for a minute.
  5. Now add the onion and sauté until it turns golden brown.
  6. Now add green beans, carrot, cauliflower and sauté for 2 more minutes.
  7. Now add the ground coriander paste and sauté for 5 more minutes and bring to boil
  8. Now add the coconut milk, soaked rice, salt to taste; mix well. Cover the pressure cooker and cook for 4 whistle.  remove from heat.
  9. Once the pressure is released; open the lid and serve.

NOTES:

  1. Goes well with pachadi.
