Easy tomato rice recipe

INGREDIENTS:

  1. Ripe tomatoes - 2
  2. Hot chili powder - 1/4 teaspoon (tsp)
  3. Ghee - 1 tablespoon
  4. Mustard seed - 1 teaspoon (tsp)
  5. Cooked rice - 1 Cup
  6. Salt - for taste
  7. Curry leaves - 5
  8. Oil - 2 tablespoon (tbsp)

PREPARATION:

  1. Toast 1 table spoon of mustard seed in a hot pan for 2-3 min.  Grind tomatoes, roasted mustard seed and salt and grind it to a find paste.
  2. In a pan heat oil, add mustard seed  when it splatter, add curry leaves and cook for 1 – 2 min. Now add the ground paste and hot chili powder and bring to a boil. Simmer and cook until oil separates.
  3. Now add the Ghee and cook for another 1-2 min. Add the rice and cook for another 2-3 min and serve.
