INGREDIENTS:

  1. Rice - 1/2 kilogram (2 1/2 cup)
  2. Water - 5 cup
  3. Thinly sliced onion - 3
  4. Garam masala powder - 1/2 teaspoon (tsp.)
  5. Lemon - 1/2
  6. Cashew - 5
  7. -- Grind to paste --
    1. Tomato - 1
    2. Green chili - 2
    3. Mint leaves - from 1 bunch
    4. Ginger - 1 inch
    5. Garlic - 10 cloves
    6. Cashew - 5
    7. Cinnamon stick - 1 inch
    8. Fennel seed - 1 teaspoon (tsp.)
    9. Clove - 3
    10. Cardamom - 2
  8. Oil - 4 teaspoon (tbsp.)
  9. Salt - as needed.

PREPARATION:

  1. Grind all the ingredients (tomato, green chili, mint leaves, ginger, garlic, cashew, cinnamon stick, fennel seeds, cloves, cardamom) under the section "Grind to paste" into a fine paste by adding little water as possible.
  2. Soak rice for 20 minutes in water by squeezing the lemon juice. Filter water and keep the rice aside.s
  3. Heat oil in pressure cooker, add onion and cook until it turns golden brown.
  4. Now add garam masala powder, ground paste, salt to taste and cook until oil separates.
  5. Now add the soaked rice, water (Ratio: 2 cup of water for 1 cup of rice) and pressure cook for 3 whistle.
  6. Once the pressure is released, add roasted cashew in ghee mix well and serve.

NOTES:

  1. Goes well with korma, pachadi.
