Coconut milk rice recipe

INGREDIENTS:

  1. Rice - 2 cups
  2. Coconut milk - 4 cups
  3. Curry leaves - 4
  4. Cardamom - 2
  5. Cinnamon stick - 1/2 inch
  6. Bay leaf - 1
  7. Ghee - 3 tablespoon (tbsp)
  8. Salt - to taste

PREPARATION:

  1. In pan melt the ghee, add cardamom, cinnamon stick, bay leaf and cook for 1 min.
  2. Now add curry leaves and cook until they stop splattering. Now add the coconut milk and bring to boil.
  3. Now add the rice and bring to boil again.
  4. Lower the heat simmer and cook until the rice is done.
