Coconut milk green gram rice

INGREDIENTS:

  1. Basmati rice - 3 cup
  2. Green gram - 1 cup
  3. Coconut milk - 3 cup
  4. Thinly sliced onion - 2
  5. Ginger paste - 2 teaspoon (tsp.)
  6. Garlic paste - 2 teaspoon (tsp.)
  7. Finely chopped tomato - 1
  8. Finely chopped coriander leaf - from 1/2 bunch.
  9. Finely chopped mint leaf - from 1/4 bunch
  10. Sliced into 2 green chili - 6
  11. Cinnamon stick - 2 inch
  12. Cardamom - 2
  13. Cloves - 5
  14. Bay leaf - 1
  15. Salt - to taste
  16. Oil - 2  tablespoon (tbsp.)

PREPARATION:

  1. Soak basmati rice and green gram for 1/2 an hour. Drain the water and keep it aside.
  2. In pressure cooker heat oil; add cinnamon stick, cardamom, cloves, bay leaf, onion and sauté until onion turns golden brown.
  3. Now add ginger, garlic paste and sauté until raw smell is gone.
  4. Now add tomato, green chili and sauté until oil separates.
  5. Now add the coconut milk and bring to boil.
  6. Now add soaked rice, green gram, salt to taste, 2.5 to 3 cups of water and bring to boil.
  7. Now add coriander leaves, mint leaves.
  8. Place the lid simmer and cook until 2 whistle. Remove from heat; once the pressure is released. Serve the rice.
