Coconut milk rasam recipe

INGREDIENTS:

  1. Diluted coconut milk - 4 cup
  2. Minced (finely chopped) tomato - 3
  3. Chili powder - 2 teaspoon (tsp.)
  4. Mustard seed - 1 teaspoon (tsp.)
  5. Curry leaf - 1 sprig
  6. Rasam powder - 3 teaspoon (tsp.)
  7. Coriander leaf - 1/2 cup
  8. Oil - 2 tablespoon (tbsp.)
  9. Salt - as needed

PREPARATION:

  1. Heat oil in a pan. Add mustard seed once it splatter add curry leaves.
  2. Now add the tomatoes and sauté until they become soft and mushy.
  3. Now add diluted coconut milk and heat it by stirring it occasionally.
  4. Now add the rasam, chili powder and stir it. Now bring this to boil . (i.e. make sure it does not spill).
  5. Now add the coriander leaves, salt and continue boiling for few minutes then serve.
