Yellow pumpkin puri recipe

INGREDIENTS:

  1. Shredded yellow pumpkin - 1 cup
  2. Wheat flour - 1/2 cup
  3. Shredded Jaggery - 1/2 cup
  4. Crushed cardamom - 2
  5. Salt - a pinch

PREPARATION:

  1. In a pan add 3 tablespoon (tbsp.) of water, shredded Jaggery. Once the jaggery is melted bring to boil.
  2. Now add the shredded yellow pumpkin to the melted jaggery and cook until the pumpkin is cooked well. Once pumpkin cooked remove from heat.
  3. Now add the wheat flour, salt and make a dough like you do for puri and keep it aside for 30 minutes.
  4. Now make them into small balls (size of a lemon)
  5. Flatten these balls to a thin disc using roller pin
  6. Heat oil in a deep pan to 350 F.  Now deep fry the flattened dough until they turn golden brown and serve.

NOTES:

  1. Kid will love these.
