Vendakkai vathakal (okra fry) recipe

INGREDIENTS:

  1. Vendakkai (okra) - 250 grams
  2. Chinna vengayam (onion) or shallots - 5
  3. Hot green chili - 2
  4. Mustard seed - 1/4 teaspoon (tsp)
  5. Split black gram - 1/4 teaspoon (tsp)
  6. Curry leaves (optional) - 5
  7. Oil - 1/4 cup
  8. Salt - to taste

PREPARATION:

  1. Cut vendakkai (okra) into find pieces. Cut shallots, green chili into fine pieces.
  2. In a pan heat oil add mustard seed, Split black gram . When mustard seed start to splatter add cut shallot, green chili, curry leaves and cook until the onion turns golden brown.
  3. Now add the cut vendakkai (okra), salt and fry until the vendakkai loses its slime and fried well.

NOTES:

  1. You can sprinkle water if it gets too dry. The trick is not to make is a mash.
