Pavakkai (bitter gourd) poriyal recipe

INGREDIENTS:

  1. Pavakkai (bitter gourd) - 200 grams
  2. Onion - 2
  3. Tomato - 1
  4. Green chili - 2
  5. Chili powder - 1 teaspoon (tsp.)
  6. Coriander powder - 1 teaspoon (tsp.)
  7. Masala powder or Garam masala powder - 1/2 teaspoon (tsp.)
  8. Turmeric powder - 1/2 teaspoon (tsp.)
  9. Ginger paste - 1 teaspoon (tsp.)
  10. Garlic paste - 1 teaspoon (tsp.)
  11. Jaggery (optional) - turkey berry (Sundakkai) size.
  12. Salt - to taste
  13. -- For Tempering --
    1. Oil - 1 tablespoon (tbsp.)
    2. Mustard seed - 1 tablespoon (tsp.)
    3. Curry leaf - 5

PREPARATION:

  1. Cut the bitter gourd into small rings.
  2. Thinly slice onion, tomato and green chili.
  3. Fry the bitter gourd in oil until it turns color.
  4. In a pan heat oil , add mustard seeds once the mustard seed stop splattering add onion and cook until golden brown.
  5. Now add tomato, green chili and cook until oil separates.
  6. Now add the ginger, garlic page and cook until raw smell goes (2 minutes).
  7. Now add chili powder, coriander powder, masala or garam masala powder, turmeric powder and cook for minute.
  8. Now add 1/2 cup of water, jaggery, salt to taste and bring to boil. Once it reaches a thick consistency.
  9. Add the fried bitter gourd and cook until its cooked and serve. NOTE: cook until all the water is gone.
