INGREDIENTS:

  1. Potato - 1 big
  2. Chopped onion - 1
  3. Chopped small tomato - 1
  4. Mustard seed - 1/2 teaspoon (tsp.)
  5. Fennel seed - 1/2 teaspoon (tsp.)
  6. Split Bengal gram - 1/2 teaspoon (tsp.)
  7. Curry leaf - little
  8. Dry chili - 2
  9. Turmeric powder - 1/2 teaspoon (tsp.)
  10. Coriander leaves - little.
  11. Oil - 2 teaspoon (tsp.)
  12. Salt - as needed

PREPARATION:

  1. Cut the potato into small cubes. Boil and cook them until they are cooked 3/4th by adding salt as needed. Once cooked drain all the liquid and keep it aside.
  2. In a pan heat oil. Add mustard seeds, fennel seeds, split bengal gram, curry leaves, dry chili and sauté until they mustard seeds stop splattering.
  3. Now add onion and sauté until they become translucent (golden brown).
  4. Now add tomato, turmeric and sauté until tomatoes become mushy.
  5. Now add the boiled potato cubes, salt if needed. Place a lid and cook this in simmer for 5 minutes. NOTE: time to time stir to avoid burning.
  6. After 5 minutes. Cook until the masala is coated well with potato. Before removing from heat garnish with coriander leaves and mix well.

NOTES:

  1. Goes well as side dish for rice.
