Potato masala recipe

INGREDIENTS:

  1. Potatoes - 300 grams
  2. Onion - 150 grams
  3. Ginger - 1 inch
  4. Garlic - 4 cloves
  5. Hot green chili - 4
  6. Coconut milk - 1/4 cup
  7. Turmeric powder - 1/2 teaspoon (tsp)
  8. Mustard seeds – 1 teaspoon (tsp)
  9. Uluttam paruppu (split black gram) - 1 teaspoon (tsp)
  10. Oil - as needed
  11. Salt - as needed
  12. Curry leaves (optional ) - 5

PREPARATION:

  1. Clean, skin (optional) and cut potatoes into 1 inch cubes.
  2. Cut onions, ginger, garlic and hot green chili into fine pieces.
  3. Boil and cook the potatoes with coconut milk, turmeric powder and salt. (add water if needed)
  4. In a pan heat oil, add mustard seed, once it start to splatter add Uluttam paruppu (split black gram) , ginger, garlic, hot green chili and curry leaves and cook for 2-3 min.
  5. Now add the boiled potatoes with coconut milk, simmer and cook until the right consistency is reached and serve.
