Ladies finger (vendaikkai) masala recipe

INGREDIENTS:

  1. Ladies finger (vendaikkai) - 500 grams
  2. Oil - 4 table spoon
  3. Thinly sliced Onion - 250 grams
  4. Finely graded ginger - 1 teaspoon (tsp)
  5. Finely chopped tomatoes - 125 grams or 1/2 cup
  6. Salt - to taste
  7. Turmeric powder - 1/2 teaspoon (tsp)
  8. Green chili paste - 1 teaspoon (tsp)
  9. Coriander leaves - 10 (optional)

PREPARATION:

  1. Cut the ladies finger into 1 inch pieces. Remove head, tail part and throw them.
  2. In a pan heat oil add the onion and cooking until it turns golden brown.
  3. Now add the ginger, tomatoes, salt, turmeric powder, green chili paste and cook until oil separates.
  4. Now add the ladies finger and mix well.
  5. Cover, simmer and cook until the ladies finger is done and serve.

NOTES:

  1. Don't mix to long or too often the ladies finger will become a thick paste.
  2. Sprinkle water time to time if the masala become dry and get burnt.
