Kerala style aviyal recipe

INGREDIENTS:

  1. -- Vegetable --
    1. Ash gourd -3/4 cup
    2. Cucumber - 1 cup
    3. Carrot - 1
    4. Drumstick - 1
    5. Green beans – 6 or 7
    6. Potato - 1
    7. Plantain - 1
    8. Raw mango - 6 medium size pieces
    9. Elephant foot yam - 100 grams
  2. -- Grind to a fine paste --
    1. Coconut - 1 cup
    2. Cumin seed - 1/2 teaspoon (tsp.)
    3. Green chili - 3
  3. Curd - 2 tablespoon (tbsp.)
  4. Curry leaves - 1 sprig
  5. Coconut oil - 3 teaspoon (tsp.)
  6. Salt - as needed

PREPARATION:

  1. Cut all the vegetables into big cubes.
  2. Grind coconut, cumin seed, green chili into a fine paste.
  3. Cook all the vegetables with salt by adding water as needed. NOTE: The vegetables should be soft but not mushy. (use very less water and cook)
  4. Once the vegetables are cooked add the ground coconut paste and bring aviyal to boil in medium flame.
  5. Now add yogurt or curd to sourness preference and cook for few minutes and remove from heat.
  6. In a pan heat coconut oil add curry leaves sauté for few seconds and add to aviyal an serve.

NOTES:

  1. You can skip yogurt or curd, if you are adding raw mangoes or add yogurt or curd according to the sourness you want.
  2. Serves: 3 to 4 people
