INGREDIENTS:

  1. Brinjal (egg plant) - 1/4 kilogram
  2. Onion - 2
  3. Tomato - 2
  4. Turmeric powder - 1/2 teaspoon (tsp.)
  5. Chili powder - 1 tablespoon (tbsp.)
  6. Coriander powder - 1 tablespoon (tbsp.)
  7. Cinnamon stick - small piece
  8. Clove - 1
  9. Curry leaf - 1 sprig
  10. Coriander leaf - 1 sprig
  11. Oil - 1 tablespoon (tbsp.)
  12. Salt - a needed.

PREPARATION:

  1. Chop onion, tomato, brinjal into small pieces.
  2. In a pan heat oil cinnamon stick, clove, curry leaves. Once the curry leaves stop splattering add onion and sauté until they turn translucent (golden brown).
  3. Now add the tomato and cook until oil separates.
  4. Now add turmeric powder, chili powder, coriander powder and sauté until the raw smell is gone.
  5. Now add the brinjal (eggplant) pieces and sauté for 2 to 3 minutes.
  6. Now add 1/2 tumbler of water, salt. Cook this until the brinjal is cooked well and serve.

NOTES:

  1. You can also cook this until oil separates as well.
