Potato tomato curry recipe

INGREDIENTS:

  1. Potato - 4
  2. Chopped Tomato - 2
  3. Chopped Onion (medium) - 2
  4. Chopped Green chili - 5
  5. Chopped Ginger - 1 inch
  6. Yogurt - 2 teaspoon (tsp.)
  7. Curry leaves - 1 sprig
  8. Mustard seed - 1 teaspoon (tsp.)
  9. Split black gram - 1 teaspoon (tsp.)
  10. Fenugreek seed - a pinch
  11. Oil - 4 teaspoon (tsp.)
  12. Salt - as needed

PREPARATION:

  1. Boil the potatoes, peel and cut them into small pieces or mash them coarsely.
  2. Heat oil in a pan. add mustard seeds, black gram, fenugreek seeds once the mustard seeds stop splattering add ginger, green chilies, onion and sauté until the onion turns translucent (golden brown)
  3. Now ad the tomatoes and cook until they become mushy.
  4. Now add the potatoes, salt as needed and sauté.
  5. Now add the yogurt and cook. Remove just before the curry starts to boiling  NOTE: don't boil after you add yogurt.
  6. Finally add curry leaves and serve.
