Paneer mint leaves curry recipe

INGREDIENTS:

  1. Paneer - 300 grams
  2. -- Sauté and grind to paste --
    1. Mint leaves - from 1 bunch
    2. Coriander leaves - from 1/2 bunch
    3. Curry leaves - from 1/2 bunch
    4. Green chili - 4
    5. Ginger - 3 or 4 inches
    6. Garlic - 5 cloves
    7. Tomato - 4
    8. Onion - 3
    9. Oil - 2 teaspoon (tsp.)
    10. Salt - to taste
  3. -- To Steam --
    1. Cut mixed vegetables - 300 grams
    2. Turmeric powder - 1/4 teaspoon (tsp.)
    3. Salt - to taste.
  4. -- For Tempering --
    1. Oil - 1 teaspoon (tsp.)
    2. Unsalted Butter - 1 teaspoon (tsp.)
    3. Cumin seed - 1 teaspoon (tsp.)

PREPARATION:

  1. Steam or boil with little water as possible the mixed vegetables with turmeric powder and salt.
  2. In a pan heat 2 teaspoon (tsp.) oil. Add the onion, ginger, garlic, tomato, green chili and Sauté for 5 to 10 minutes.
  3. Now add the coriander leaves, curry leaves, mint leaves and Sauté for 2 to 3 minutes.
  4. Remove from heat cool them and grind them to a fine paste by adding little water as possible and salt to taste.
  5. Heat 1 teaspoon (tsp.) oil and butter in a pan, add the cumin seeds when it starts to splatter add the ground paste and water as needed and bring to boil.
  6. Now add the paneer and cook until its done. Now add the steamed vegetables and bring to boil and serve.
