Kara kuzhambu recipe (1)

Spicy curry cooked with tamarind juice and goes well with plain rice. You can use vegetables like Drumstick, Ladies finger, Brinjal to prepare this kuzhambu (curry).

INGREDIENTS:

  1. Chopped Ladies finger - 200 grams
  2. Tamarind juice - 350 milliliter
  3. Turmeric powder - a pinch
  4. Garlic - 15 to 20 clove ( add more to your preference)
  5. Shallot (sambar onion) - 2 to 3
  6. Chopped Tomato - 2
  7. Vadagam - as needed
  8. Turmeric powder - little
  9. Sambar powder - 2 teaspoon (tsp.)
  10. Oil - 6 to 7 tablespoon (tbsp.)
  11. Salt - to taste

PREPARATION:

  1. Heat oil in a pan. add vadagam and sauté. Now add add onions, garlic, tomatoes and turmeric and sauté well. When it is half cooked, add the ladies finger and fry.
  2. Add required amount of salt and sambar powder and sauté. when the ladies finger gets half sautéed, add the tamarind juice and bring it to boil. Let it boil and cook in a low flame for at least 15 to 20 minutes or until it becomes semi solid and oil separates and floats on top.
  3. Kara kuzhambu is ready.

NOTES:

  1. if you don't have vadagam. temper the mustard seeds, curry leaves, split black gram, cumin seeds, fenugreek seeds.
