Garlic kuzhambu recipe

INGREDIENTS:

  1. Garlic - 4 whole
  2. Tamarind - 1 big lemon size
  3. Curry leaf - 10 or from 2 stem
  4. Powdered jaggery - 1 teaspoon (tsp.)
  5. Black pepper - 1 tablespoon (tbsp.)
  6. Cumin seed - 1 tablespoon (tbsp.)
  7. Chili powder - 2 tablespoon (tbsp.)
  8. Turmeric powder - 1/4 teaspoon (tsp.)
  9. Crystal sea salt - 1 tablespoon (tbsp.)
  10. Oil - 2 tablespoon (tbsp.)

PREPARATION:

  1. Remove the skins from the garlic cloves.
  2. Soak tamarind in 2 cup of water for 20 minutes and take the juice.
  3. Heat oil in a pan and add black pepper and sauté until they splatter. Now add garlic and sauté until they turn golden brown.
  4. Grind the garlic into fine paste by adding little water as possible. Now add to this chili powder, salt, turmeric powder, tamarind juice and mix well.
  5. In a pan heat 1/2 cup of oil, add cumin seeds, curry leaves and let them splatter. Now add the tamarind juice mixture and bring to boil. Boil and cook this until oil separate's.
  6. Now add the powdered jaggery. Remove from heat and serve.
