INGREDIENTS:

  1. Yellow pumpkin - 1 medium size
  2. Black eye pea - 1 cup
  3. Shredded coconut - 1/2 cup
  4. Dry chili - 6
  5. Cumin seed - 1 1/2 teaspoon (tsp.)
  6. Black pepper - 1 teaspoon (tsp.)
  7. Asafoetida powder - 1/4 teaspoon (tsp.)
  8. -- For tempering --
    1. Coconut oil - 1 tablespoon (tbsp.)
    2. Mustard seed - 1 teaspoon (tsp.)
    3. Split bengal gram - 1 teaspoon (tsp.)
    4. Curry leaves - 5
  9. Salt - to taste

PREPARATION:

  1. Skin the pumpkin and cube the pulp into 1 inches pieces.
  2. Soak overnight and cook the black eye pea.
  3. Grind coconut, cumin seeds, dry chili , black pepper, curry leaves and grind to a thick paste.
  4. In a pan add cubed pumpkin, 1 cup of water and cook them. when the pumpkin is cooked add the ground coconut and cook for 5 minutes.
  5. Now add the cooked black eye pea and cook for 10 minutes and keep it aside.
  6. In another pan heat coconut oil, add mustard seed, bengal gram, curry leaves when mustard seed start to splatter add curry leaves sauté for 30 seconds and add to pumpkin koottu (cooked pumpkin) and serve
