INGREDIENTS:

  1. Amaranth greens- 1 bunch
  2. Tomato - 2
  3. Mustard seed - 1/2 teaspoon (tsp.)
  4. Dry chili - 2
  5. Salt - as needed
  6. Oil - 1 tablespoon (tbsp.)

PREPARATION:

  1. Boil amaranth greens, tomato with 1/2 cup of water. you can use idli cooker or pressure cooker.
  2. Mash the greens and keep it aside.
  3. Heat oil in a pan, add mustard seeds, dry chili. Once the mustard seeds stop splattering add to the boiled amaranth greens.
  4. Now cook the amaranth greens, salt as needed for 2 more minutes and serve.

NOTES:

  1. Good to go with rice.
