Beetroot koottu recipe

INGREDIENTS:

  1. One inch size cubed Beetroot - 2
  2. Soaked Split Bengal gram - 100 grams ( soak 10 minutes and drain water)
  3. Finely chopped onion - 1
  4. Chopped tomato - 1 small
  5. Chopped onion - 1
  6. Hot chili powder - 1/2 teaspoon (tsp.)
  7. Turmeric powder - 1/4 teaspoon (tsp.)
  8. Fresh shredded coconut - 2 tablespoon (tbsp.)
  9. -- For Tempering --
    1. Oil - 2 teaspoon (tsp.)
    2. Mustard seed - 1/2 teaspoon (tsp.)
    3. Broken dry chili - 2
    4. Garlic - 2 cloves
    5. Curry leaves - 5
    6. Cumin seed - 1/2 teaspoon (tsp.)
  10. Salt - to taste

PREPARATION:

  1. Heat oil in a pressure cooker add mustard seed and when they start splattering add broken dry chili, curry leaves, garlic and cumin seed and cook for 1 - 2 minutes.
  2. Now add the onion and until it turns golden brown.
  3. Now add tomatoes and cook until oil separates. 
  4. Now add the beetroot, chili powder, turmeric powder, salt to taste and cook for 5 min.
  5. Now add the soaked Bengal gram and mix well for a min.
  6. Add 1/4 to 1/2 cup of water, close lid and cook for 1 whistle. (don't open the cooker until pressure is released)
  7. Add the shredded coconut and mix well and serve.

NOTES:

  1. You can cook this in a pan. Once you add water simmer and cook until the beetroot is cooked.
  2. Enjoy with puri, rice and curd rice.
