Vegetable idli(idly) recipe

INGREDIENTS:

  1. Idli(idly) dough - 8 cup
  2. Carrots - 2
  3. Large green beans - 10
  4. Onion - 2
  5. Green chili peppers - 4
  6. Cabbage - 100 grams
  7. Chili powder - 2 teaspoon (tsp)
  8. Turmeric powder - 1/4 teaspoon (tsp)
  9. Fenugreek seeds - 1/2 teaspoon (tsp)
  10. Mustard seed - 1/2 teaspoon (tsp)
  11. Coriander leaves – 1/4 cup or a handful
  12. Oil or Ghee - as required
  13. Salt - to taste

PREPARATION:

  1. Wash and cut carrots, green beans, cabbage into very fine pieces. Now boil or steam the vegetables by adding salt and half of the turmeric powder.
  2. Cut onion and green chili into small pieces.
  3. In a pan heat the oil add mustard seed and when it start to pop or spatter. Now add the fenugreek seeds stir for 30 sec. Add the onion and green chili and stir for 1 min.
  4. Now add the steamed or boiled (drain water and keep it separate) vegetables, stir and cook for 10-15 min. NOTE: Add water if necessary.
  5. Add coriander leaves and cook for another 2 min.
  6. Now added the cooked vegetables to the idli(idly) dough.
  7. Stream and make idli(idly) with the dough.

NOTES:

  1. Preparation Time: 15 - 20 min if you have the idli(idly) ready
