INGREDIENTS:

  1. White whole corn kernel - 1 cup
  2. Black gram - 1/2 cup
  3. Fenugreek seed - 2 tablespoon (tbsp.)
  4. Salt - as needed

PREPARATION:

  1. Soak corn kernel in for 8 hours in water.
  2. Soak black gram in water and soak them for 8 hours in refrigerator.
  3. Soak fenugreek seeds in water for 8 hours.
  4. In a blender or a wet grinder grind soaking ingredients separately into a batter consistency to the dosai batter.
  5. Now mix all the batter, salt as needed and beat well. Leave the batter to ferment for 6 to 8 hours.
  6. Now make thin dosai with batter and serve.
  7. -- Making Dosai --
    1. Heat the flat iron skillet or non-stick skillet pan well.
    2. Pour a spoonful of batter in the center, spread with the back of the spoon to a thin round.
    3. Once this side is cooked, flip over and cook until the dosai is cooked on the other side. Remove and serve the dosai.

NOTES:

  1. You can make paniyaram with this batter as well.
