Flattened rice dosai recipe

INGREDIENTS:

  1. Rice - 3 cup
  2. Black gram - 1 cup
  3. Flattened rice (beaten rice) - 1 cup
  4. Fenugreek seed - 1 teaspoon (tsp.)
  5. Oil - as needed
  6. Salt - to taste

PREPARATION:

  1. Soak rice in water for 4 hours. Drain water and keep it aside.
  2. Soak black gram and fenugreek seed for 4 hours. Drain water and keep it aside.
  3. Soak flatten rice (beaten rice) for 4 hours. Drain water and keep it aside.
  4. Grind Soak flatten rice (beaten rice) to a batter by adding water as needed.
  5. Now grind soaked rice, soaked black gram to a dosai batter by adding water as needed.
  6. Mix the batter by adding salt to taste as needed. Keep it overnight to ferment like 12 hours.
  7. When ready to cook. Beat in the batter well
  8. Heat the flat iron skillet or non-stick tawa pan well.
  9. Pour a spoonful of batter in the center, spread with the back of the spoon to a thin round.
  10. Pour a tsp. of ghee or oil over it. Remove with spatula when crisp.
  11. Serve hot with chutney  or sambar.
