INGREDIENTS:

  1. Garlic cloves - 1 cup
  2. Dry chili - 10 or as needed
  3. Tomato - 1
  4. Curry leaf - a handful or 1/2 cup
  5. Oil - 2 tablespoon (tsp.)
  6. Salt - as needed

PREPARATION:

  1. Heat oil in a pan. Roast the dry chili in oil until it does not turn color. Remove dry chili and keep it aside. Then
  2. Roast 1/2 of the curry leaves in left over oil.  Remove curry leaves and keep it aside. Then
  3. Roast the tomato in left over oil until the skin starts to peel off. Remove the tomato and keep it aside. Then
  4. Roast the garlic to golden brown in left over oil and keep it aside.
  5. Leave all the roasted ingredients to cool down to room temperature. Once all the roasted ingredients are cooled down.
  6. Grind roasted garlic, roasted  dry chili, roasted tomato,  roasted curry leaf, rest of the curry leaf (non roasted), salt to a thick chutney by adding water as needed and serve.

NOTES:

  1. You roast the ingredients one by one in the same pan with same oil.
