INGREDIENTS:

  1. Thick yogurt - 1 cup
  2. Rice flour - 1/4 cup
  3. Fresh shredded coconut - 1 cup
  4. Finely chopped Onion - 2
  5. Finely chopped Carrot - 1
  6. Finely chopped Capsicum - 1/2
  7. Finely chopped Curry leaf - 6 or from 1 stem
  8. Finely chopped Coriander leaf - 10 or from 1 steam
  9. Finely shredded Ginger - 1 inch
  10. Cumin seed - 1/2 teaspoon (tsp.)
  11. Black pepper - 1/2 teaspoon (tsp.)
  12. Sesame Oil - 2 tablespoon (tbsp.)
  13. Salt - 1/2 teaspoon (tsp.)

PREPARATION:

  1. Crush the black pepper and cumin seeds into a powder.
  2. In a bowl add carrot, capsicum, onion, coconut, coriander leaves, curry leaves, black pepper powder, cumin seed powder, salt as needed. Mix them well.
  3. Now add to the bowl rice flour, yogurt and make a thick batter consistent to adai batter. NOTE: add water if needed.
  4. -- Making the roti --
    1. Heat a flat iron skillet. Coat the surface of the flat iron skillet with oil.
    2. Pour a ladle of batter and spread it to thick round sheet.
    3. Now sprinkle with oil. Cover with a lid and lower the heat and cook for 2 minutes until the side down becomes golden brown.
    4. Now flip the roti. Sprinkle with 1/2 teaspoon (tsp.) of oil.
    5. Cook this side for a minute and serve.
  5. Make more roti with rest of the batter and serve.

NOTES:

  1. Goes well with garlic chutney.
