INGREDIENTS:

  1. Rice flour - 1/2 kilogram
  2. Soaked split green gram - 1/2 cup
  3. Ginger - 1 inch
  4. Green chili - 5
  5. Unsalted butter - 1/4 cup
  6. Chopped Curry leaves - as needed
  7. Oil - to deep fry
  8. Salt - to taste

PREPARATION:

  1. Grind green chili, ginger into a fine paste by adding little water. Now squeeze the juice of this and keep it aside.
  2. Now mix rice flour, ginger chili juice, butter, curry leaves, salt into a soft dough.
  3. Make small balls out of the dough and flatten them into a thin round sheet.
  4. Now deep fry these thin sheet golden brown on both sides and serve.

NOTES:

  1. For better result fry them in batches so the oil does not cool down fast. Oil temperature should be close 350 degree Fahrenheit all the time.
