INGREDIENTS:

  1. Ragi flour - 1 cup
  2. Maida flour - 1/2 cup
  3. Wheat flour or multigrain flour - 1 cup
  4. Powdered sugar - 1 cup
  5. Baking powder - 3/4 teaspoon (tsp.)
  6. Unsalted butter (room temperature) - 3/4 teaspoon (tsp.)
  7. Egg - 1
  8. Cardamom powder - a pinch
  9. Cinnamon powder - a pinch
  10. Vanilla essence - a pinch
  11. Salt - as needed

PREPARATION:

  1. Sift ragi flour, maida flour, wheat flour, baking powder together so they are mixed well. i.e. 3 to 4 times
  2. In a bowl add egg, powdered sugar and beat well until it become a cream (Refer to Creaming butter by hand). Now add cardamom powder, cinnamon powder, salt, vanilla essence and beat well until they are mixed together.
  3. Now add sift flour little by little and make a soft dough.
  4. Coat a baking tray with butter. Make equal small size balls and place them in the tray and gently press them. do not over crowd them as they will expand leave about 2 inches of spaces between them.
  5. Pre heat the oven to 160 to 170 degree Celsius and bake them for 15 minutes. After 15 minutes move them to different tray and cool them to room temperature and serve.

NOTES:

  1. Depending on the over you might not need 15 minutes. check after 8 minutes; time to time to see if the cookies bottom browned or cookies side crumble easily that means the cookies are baked.
