Village style Uppu kari recipe

Uppu kari is an ultimate village dish goes well with old water rice (Pazhaya Soru Kanji). Let see how to make it.

INGREDIENTS:

  1. Mutton pieces  - 1 kilogram
  2. Fennel seed - 1 teaspoon (tsp.)
  3. Chopped Shallot (sambar onion) - 200 grams
  4. Dry chili - 150 grams
  5. Turmeric powder - 1/4 teaspoon (tsp.)
  6. Water - 150 milliliter
  7. Cumin seed - 1 teaspoon (tsp.)
  8. Curry leaf - little
  9. Mint leaf - little
  10. Chopped Coriander leaf - little
  11. Oil - 200 Milligram
  12. Salt - as needed

PREPARATION:

  1. In a clay pot heat oil. Now add fennel seeds and sauté.
  2. Now add chopped shallot (sambar onion), dry chili, curry leaf and sauté until the onion become translucent.
  3. Now add the mutton pieces and sauté.
  4. Now add cumin seeds, turmeric powder, salt and mix well.
  5. Now add water. Place a lid and cook until the mutton is cooked. Time to time stir to avoid burning. You will see mutton release all the water and room will be covered with aroma. once the right consistency reached.
  6. Now add coriander leaves, mint leaves and mix well. Remove from heat and serve.
