Mutton (goat or lamb) kadai fry (varuval) recipe

INGREDIENTS:

  1. Mutton (goat or lamb) boneless - 500 grams
  2. Onion - 3
  3. Tomatoes - 1
  4. Hot green chili - 2
  5. Fresh ginger, garlic paste - 3 tablespoon (tbsp)
  6. Cinnamon stick - 1 inch
  7. Cardamom - 2
  8. Hot chili powder - 2 teaspoon (tsp)
  9. Oil - 1/4 cup
  10. Coriander leaves - 5
  11. Salt - to taste

PREPARATION:

  1. Cut mutton into 1 inch cubes.
  2. Cut onions, tomatoes, green chili into small pieces.
  3. In a pressure cooker add the mutton, ginger garlic paste, chili powder, coriander leaves, 3/4 cup of water.
  4. Pressure cook for 1 white, reduce the heat and pressure cook for 10 min more.
  5. At the of pressure cooking if water is left simmer and cook most of the water evaporates.
  6. In kadai (pan) heat up oil add cinnamon stick, cardamom and cook for 30 sec or so.
  7. Now add the cooked mutton, simmer and cook until oil separates and serve.
