Aatukal (goat trotters) paya recipe

INGREDIENTS:

  1. Aatukal (goat or lamb trotters) - 4
  2. Ginger garlic paste - 2 teaspoon (tsp.)
  3. Coriander leaf - 15 or as needed for garnish
  4. Thinly sliced onion - 2
  5. Finely chopped tomato - 2
  6. Chili powder - 2 teaspoon (tsp.)
  7. Garam masala powder - 1/2 teaspoon (tsp.)
  8. Black pepper powder - 1/2 teaspoon (tsp.)
  9. Coriander powder - 3 teaspoon (tsp.)
  10. Cinnamon stick - 1 inch
  11. Cardamom - 1
  12. Clove - 1
  13. Bay leaf - 1
  14. Oil - 50 milliliter
  15. Salt - as needed

PREPARATION:

  1. In a pressure cooker heat oil. Now add cinnamon stick, clove, cardamom, bay leaf until the start to smell.
  2. Now add onion and sauté until it turns translucent (golden brown).
  3. Now add ginger garlic paste and sauté until the raw smell is gone.
  4. Now add the Aatukal (goat or lamb trotters) cover with a lid and cook in medium heat for 5 minutes.
  5. Now add chili powder and sauté for 1 minute.
  6. Now add coriander powder, black pepper powder and sauté for a minute.
  7. Now add tomato, salt as needed, 3 liter of water and pressure cook for 1/2 an hour or 6 to 7 whistle.
  8. Once the pressure is released. Place it in heat (stove) and cook until oil starts to float. Now add garam masala powder, coriander leaf. Remove from heat (stove) and serve.

NOTES:

  1. Goes well with idli, dosai, paratha
