INGREDIENTS:

  1. Tortilla - 1 big or 2 small
  2. Egg - 2
  3. Chopped capsicum - 2 to 3 tablespoon (tbsp.)
  4. Finely chopped scallions (spring onion) - 1
  5. Shredded cheese - little
  6. Oil - as needed
  7. Salt - as needed

PREPARATION:

  1. Break the eggs into a bowl, add a tablespoon (tbsp.) of water and beat them well. NOTE: adding water helps the omelets fluffy.
  2. Now add capsicum, scallions, salt as needed and beat well.
  3. Heat a oil iron skillet or pan (oil should be coated well the surface). Now add the egg. Reduce the heat to medium and cook until lower side is cooked. flip and cook for another minute or until the omelet is cooked. Keep this aside.
  4. In the same or different iron skillet. add oil and coat the surface well. Once the oil is hot. Now place the tortilla. Place omelet, cheese to cover half of the tortilla. Cook this for 30 seconds or until the cheese melts. Now flip and cover the tortilla side with no ingredients then serve.

NOTES:

  1. Cheese will have salt added so be careful with extra salt.
