INGREDIENTS:

  1. Egg - 6
  2. Finely chopped onion - 2
  3. Finely chopped green chili - 4
  4. Finely chopped tomato - 1 (small)
  5. Chili powder - 1/2 teaspoon (tsp.)
  6. Finely chopped coriander leaves - 1/4 cup
  7. Shredded carrot - 1 small
  8. Lemon juice - 1/2 teaspoon (tsp.)
  9. Salt - to taste
  10. Oil - as needed

PREPARATION:

  1. Break the egg in a bowl, add turmeric powder, chili powder, lemon juice, salt to taste and beat them well.
  2. Now add the onion, tomato, green chili, half chopped coriander leaves and beat the egg well.
  3. Pour the eggs whole or in batches (1/4 cup) spread them. Wait until one side is cooked then sprinkle chopped coriander. Flip the omelet other side and cook until its cooked and serve.

NOTES:

  1. How to know when to flip an omelet? The eggs should not stick to the bottom of the pan. When you use spatula around the edges of the omelet it should not stick to the skillet.
