INGREDIENTS:

  1. Basmati rice - 500 grams (4 cups approx.)
  2. Egg - 6
  3. Green chili - 5
  4. Onion - 4
  5. Carrot - 1
  6. Cheese - a small piece
  7. Coriander leaf - from 1 bunch
  8. Chili powder - 1 teaspoon (tsp.)
  9. Ghee - 1 tablespoon (tbsp.)
  10. Salt - as needed

PREPARATION:

  1. Soak rice in water for 2 hours
  2. Cook the rice in pressure cooker by adding for each 1 cup of rice 1 3/4 cup of water (7 cups of water).
  3. Finely chop onion, green chili, coriander leaves.
  4. Shredded the carrot.
  5. Heat ghee in a pan. Add onion, green chili. Sauté until the onion turns translucent (golden brown).
  6. Now add the egg. Stir and cook until they become firm and into small pieces.
  7. Now add 1/2 of coriander leaves, chili powder, salt as needed and sauté for couple of minutes.
  8. Now add the cooked rice without any lump and Mix well for couple of minutes. Remove from heat. Add the cheese, shredded carrot, rest of the coriander leaves to garnish the fried rice and serve.
