Egg and ivy gourd gravy recipe

INGREDIENTS:

  1. Thinly sliced Ivy gourd- 250 grams
  2. Egg - 4
  3. Chopped Onion - 1
  4. Chopped Tomato - 1
  5. Ginger paste - 1/4 teaspoon (tsp.)
  6. Garlic paste - 1/4 teaspoon (tsp.)
  7. Garam masala powder - 1/2 teaspoon (tsp.)
  8. Coriander powder - 1/2 teaspoon (tsp.)
  9. Cumin powder - 1/2 teaspoon (tsp.)
  10. Chopped Green chili - 2
  11. Curry leaf - 5
  12. Oil - 3 tablespoon (tbsp.)
  13. Salt - to taste.

PREPARATION:

  1. Boil the egg and remove the shell.
  2. Heat oil in a pan. Add curry leaf, onion, green chili and sauté until onion turn translucent (golden brown).
  3. Now add ginger paste, garlic paste and sauté until the raw smell is gone.
  4. Now add garam masala powder, coriander powder, cumin powder, tomato and sauté until oil separates.
  5. Now add ivy gourd, salt to taste, little water if needed and sauté for 2 minutes.
  6. Now add the boiled egg and mix well.
  7. Cover, simmer and cook for 5 minutes and serve.

NOTES:

  1. Goes well with chapati
